Shape note/Sacred Harp singing

I'd never heard of Sacred Harp singing until I read Sacred Song in America a couple of months ago. Now it seems like I am finding it more often. Or, I am more aware of its influence.
One of this morning's congregational hymns at the church I attend was "God, We Thank You For Your People", which is #375 in the New Century Hymnal. The melody had such an unusual sound that I wanted to know more about it. A footnote on the page said that the lyrics, written in 1992, were set to the tune of "Holy Manna". I looked that hymn up online, and saw that it was set to an earlier tune as well, in 1825:
